- 1 sweet potato
- 3/4 c applesauce
Scrub sweet potato clean. Puncture a few times with a fork. Place on paper towel or microwave-safe dish and microwave on high for 4-5 minutes, turning over potato half-way through cooking. (*Alternative: Preheat oven to 375 F, bake for 45 minutes or until soft).
Once cooled, split the potato and scrape out the flesh with a spoon, place into a bowl or blender. Mix in applesauce. Add small amounts of water (or more applesauce) until desired consistency for squeezing through pouch. Pour into ReSqueeze pouch, serve immediately or store in refrigerator/freezer for when you're running out the door!
